Happy New Years everyone! I’m not one for making new years resolutions (since I often don’t follow them), but this year I’ve been thinking about bringing them back into my life. On paper, and displayed in a VERY visible place like the fridge.
Some of my resolutions are 1) to spend more time outdoors either hiking or camping, 2) cooking more and trying new recipes, 3) working out often even if it’s short, 4) being more kind and loving towards myself, and 5) spending more quality time with the people I love.
I thought that keeping it basic might be best, and so far I’m doing pretty alright. I am hiking a lot more, cooking even more, and yes… running for a little mile or doing zumba in my tiny apartment! YAY for tiny wins!
As for cooking more, I decided that this week I had to fulfill my Korean kimchi fried rice craving. I made kimchi fried rice, a side of soybean sprouts, green onion salad, and brisket. Yum, yum, yum how I miss Los Angeles, and the plethora of Korean food.
